I'm still waiting for a cooking show to spend a minute or two demonstrating some actual basics like knife skills. For example, they always show you the beautifully diced onion in a bowl and say "_Just_ mix this in". No one ever shows the required prerequisite steps for actually breaking it down in under 30 seconds, or how to practice that skill to get there. Otherwise their "30 minute recipe" can add 15 minutes just for that one step

[chrisaldrich] -- often people go on cookery school courses. There might be something with Great British Chefs ? Its not indie however they often link through to bloggers and people in the independent chef scene. There has been something about slicing up the perfect bakewell using the correct pallette utensil
