catgirlinspace, you should be able to "just" use whatever name they show up with from the perspective of your client and the bridging does the translation

with perhaps one exception, if you're using Slack, and the other person is a Slack user too (you can hover over their icon and it should NOT say "incoming-webhook") then you do type the @ and then use Slack's clientside UI to choose the person you want to mention

IRC does not have special mentions - a "mention" is literally just writing someones nick
