We won't touch the current server except to copy data off it until everything is set to flip the switch

I'm worried about keeping track of it all and the steps need (beyond chat), and suggest starting a list of steps for migration so we can edit / re-order / add to it etc., since it sounds like you have a particular strategy in mind

i do that in a text file on my computer when I do these migrations myself. etherpad is probably the best bet for this

another thing that helps with these kinds of lists is for each migration "action", come up with a "how do we know it worked?" test or tests, and have that be one of the ways you pair (different person does the test than does the migration)
