[eddie] for IWCs, we still need to iron out some Jitsi challenges. Every Jitsi room that needs to be recorded needs to have it's own Jibri (recording) server. Which isn't bad to spin up for the weekend, but we need a worked out one click or couple simple steps to get them spun up and running
